Each week, seasonal fish are flown in directly from Japan, complemented by a selection of other fine sashimi, ensuring the purest flavours and endless dining surprises.
The Chilled Seafood station presents a rich selection, including plum wine-marinated South African Abalone, Alaskan King Crab Legs, Live Japanese Kuruma prawns, Sri Lankan Slipper Lobster, Jumbo Imperial Clams and Jumbo Razor Clams. At our signature caviar station, Russian caviar is exquisitely paired with Royal Smoked Salmon Fillet. Guests can select their favourite live seafood at the Outdoor Charcoal Grill Station, where chefs freshly prepare them upon order. Local Green Lobster, Giant Tiger Prawns, Hokkaido Scallops, Hiroshima Jumbo Oysters and Foil-grilled Seabass Fillet are all expertly char-grilled and served.
A spectacular range of hot and cold dishes awaits, including slow-roasted US Gold Grade Ribeye, Oven-baked Australian Rack of Lamb, Swiss Raclette Cheese, Chef-carved 48-month Iberico Bellota Ham and Italian San Daniele Ham, as well as Poached Duck Liver in Rich Chicken Broth with Citrus Carrot, and the signature Double-boiled Chicken and Fish Maw Soup in Young Coconut.
Dessert lovers will be captivated by the Jasmine Green Tea Red Bean Opera Cake, Black Pepper Tropical Fruit Mousse Bar, Fig and Strawberry Breton Tart, and the chef’s weekly creative mystery pastry box – an indulgence crafted to surprise every palate.
